Hey, I’m Coach Kathy! 

Growing up, I was often labeled the "chubby" kid. The word stuck to me like a nickname I never asked for—whispered by classmates, echoed by well-meaning relatives, confirmed by every tight waistband and fluorescent dressing room mirror. School shopping was humiliating, and summers at the lake were worse. While other girls ran down the dock in their bikinis, I tugged at my oversized T-shirt, terrified to take it off.

Gym class was no better. I stood stiffly against the wall, waiting to be picked, my stomach sinking as I was left standing—again. The unchosen. The afterthought.

Then came an even greater loss—my mother’s battle with colon cancer. The woman who once filled our home with the rich scents of slow-cooked meals grew too weak to cook. Our diet changed overnight—boxed mac and cheese, fish sticks, and frozen fries became our staples. My weight climbed, and with it, my insecurities.

I thought being “thin” would fix everything.

So, I starved myself into a Twiggy-like figure, ignoring the hunger, dizziness, and trembling hands. But even at my skinniest, I felt empty.

College brought the “Freshman 15” weight gain, then the “granola era,” where I convinced myself that processed veggie burgers and sugary granola bars were “healthy.” Later, I feared fat like it was poison, diving into the low-fat craze, filling my plate with low-fat cheese and fat-free snacks. No matter what trend I followed, I felt the same—exhausted, irritable, and stuck in a body that didn’t feel like my own.

Then, I discovered a new way. Not a diet, not deprivation, but a joyful, balanced approach to health—one that allowed me to feel good in my body, eat delicious food, and live fully. This is what I want to share with you!

Through it all, one truth became painfully clear: no matter how many diets I tried, without balanced nutrition, I was constantly exhausted and sick.

Searching for Answers

As my mom’s illness progressed, I felt helpless. Watching her fade, knowing there was nothing I could do, was unbearable. But I needed to do something—anything—to make sense of it all. So, I turned to the only place I could find real answers: the college library. (Yes, this was the pre-Google era, when research meant flipping through card catalogs and getting lost in dusty bookshelves.)

Buried in medical journals and nutrition books, I started to see a pattern—one I had never considered before. Food wasn’t just fuel; it could be medicine. Some studies linked certain foods to increased cancer risk. Others highlighted the role of weight, movement, mindset, and even stress in disease prevention. Still others emphasized the importance of connection and community.

I was stunned. Growing up in Iowa—the land of meat, potatoes, and endless fields of corn—I had never questioned our diet. It was just the way things were. But now, I wondered: If food could contribute to illness, could it also be the key to health?

Could exercise be more than punishment for what I ate? Could movement actually support my body and mind—something I wanted to do, not had to do?

Had I underestimated the power of my own thoughts? Stress had been a constant in my life—from childhood insecurities to the pressure to lose weight. I had never considered that my inner dialogue, emotions, and self-criticism might be influencing my health just as much as my diet.

As I kept reading, the connections became undeniable.

True health wasn’t just about what I ate—it was about all of it.

It was about how I moved, how I thought, how I managed stress, and even the people I surrounded myself with.

For the first time, I saw the bigger picture: real, lasting health isn’t found in a diet plan or a single solution—it’s a holistic approach that nurtures both the body and mind.

Then the pandemic hit, leaving me isolated, disconnected from my fun-loving co-workers, and stuck in a cycle of stress eating, reduced activity, and growing anxiety.

I had already learned that food wasn’t the only piece of the puzzle—but now, I fully understood just how much movement, connection, and mindset shaped my well-being.

This realization pushed me to take everything I had learned—from science, nutrition, and personal experience—and turn it into a practical, joyful approach to health.

Throughout my journey,

I accumulated significant knowledge and experience:

Earning a Bio-Science degree and working in the University Microbiology lab, where I learned to turn complex science into practical, real-world solutions.

Opening the first organic restaurant in Iowa, serving national figures like President Gerald Ford and the Joffrey Ballet, and receiving recognition from Bon Appétit and Midwest Living magazines.

Owning a natural foods store in the Colorado Rockies, where my dedication to the healing power of whole foods, herbs and spices earned me a trip to an organic ginger farm in Costa Rica.

Witnessing the power of nutrition and prayer heal my husband after a traumatic brain injury. Grateful for his recovery, we fulfilled a bucket-list dream and moved to an organic coffee farm in Panama, where we embraced the deep sense of community shared with the Ngäbe-Buglé Indian coffee workers.

Serving as an Executive Coach and Chef for 8 years at The Health Dare, where I helped thousands shed pounds and feel their best. My signature program, Cook Once, Eat 3X: Meal Prep Made Easy, empowered clients to make nutritious eating simple and sustainable.


Now living outside Asheville, NC, I published my first book, Be Younger Next Month, where I introduced The SPEAK Method™—a Simple, Affordable, and Sustainable Solution to a Healthy, Joyful Life.
